Ingredients

  • 32 4-inch cucumbers (or 52 3 1/2 inch) sliced thin (1/4 inch)
  • 8 small onions (sliced thin – 1/8 inch)
  • 1/2  cup of coarse pickling salt

 

Liquid

  • 5 cups of sugar
  • 1 1/2 teaspons of turmeric
  • 1/2 teaspoon of ground cloves
  • 2 teaspoons mustard seed
  • 2 teaspoons of celery seed
  • 5 cups of vinegar (5 percent)

Slice cucumbers and onions thin and combine. Add salt over mixture and cover with cracked ice and let stand for 3 hours.  Stir occasionally and drain well.

Combine rest of liquid ingredients and pour over vegetables.  Bring mixture to boil and reduce heat.  Immediately pack into hot, sterilized jars and seal.

Makes 8 pints
